Actual conversation/situation between younger Leslie and her mom, Linda.
Leslie’s thoughts 5 years ago: Kyle loves lasagna. I want to make the hubs happy. Ah-ha! I will make him lasagna tonight. Yes, great idea! Let’s see, I need shredded cheese – check! Pasta sauce – check! Cottage cheese – check! Lasagna noodles….
Lasagna noodles….
Lasagna NOODLES! How can I forget the noodles? Can I still make lasagna? What do I do? Don’t panic, don’t panic – call mom.
So I did.
Mom’s response?
“Leslie, do you have any other pasta in your cupboard? Just use that, throw it in a pan, and you have skillet lasagna!”
Genius.
Mom saved supper that night several years ago, and it’s been a fan favorite in my house since. I don’t think I’ve even made the original lasagna since that night. Why would I? This is such an easy, tasty recipe. The picture does not do it justice.
If you haven’t tried this, you need to. Pair a tasty lettuce salad and crunchy bread on the side – and you have dinner tonight!
15 Minute Skillet Pasta
Ingredients
- 1 lb ground beef.
- 2 1/2 cups Penne Rigate (or any smaller/fat pasta on hand).
- 1 (24 oz) jar of your favorite pasta sauce.
- 1 cup cottage cheese.
- 1 80z pkg. shredded mozzarella cheese
(*sometimes I add more cottage cheese and less shredded)
Directions
Boil pasta. While pasta is cooking, brown hamburger. Drain grease. Add cheese, cottage cheese, and pasta sauce to your hamburger. Stir. Add pasta. Toss.
Serve!
