I am a wife and mom of two boys under the age of two. I’ve loved to cook since I was a child and now that I’m a mom I consider the meals I create for our family table to be one of the fundamental building blocks of happy, healthy kids. About five years ago I got a wake-up call as I stumbled across a book that changed my life. I began voraciously reading about what we eat, how it's grown/raised, and the impact that has on not only our long term health, but our daily bodily processes as well. As a result I tossed A LOT of junk food out of my diet and something incredible happened - I felt so amazing that I had no idea I had been walking around like a virtual zombie for years. With increased energy levels, mood, and vitality I began telling everyone I could that they too could feel this good. And that is how I found my passion in all things food, health, growing, and cooking. Out of this passion grew the agricultural technology company, Terra Tech, that my husband and I started several years ago focusing on indoor and hydroponic farming in an effort to make highly-nutritious, pesticide-free and local produce widely accessible. We have a vision of a healthier future for our children's generation. I was raised in Nebraska surrounded by agriculture, yet for most of my life I gave very little thought to where my food came from and how it affected my health. In order to increase life expectancy and vitality for future generations we must shift the focus to the meals on our plates by getting in touch with cooking and agriculture. I am also the creator of Fueling Superheroes, where I blog about health as well as share the recipes that I come up with for my family's daily meals and snacks. My father was a professional chef who imparted me with an ability to cook and create in the kitchen that has been essential in applying all I have learned about food in order to come up with real-life tasty meals. Since I have a young toddler to feed I focus my meals around healthful foods that are family friendly, fast, and easy to prepare. I also pay special attention to making foods that can be enjoyed by those with food sensitivities as the industrialization of our food system has increased the instances of soy, wheat, dairy, and peanut allergies. I hope to be a help and inspiration to all in eating cleaner, greener, and healthier foods for life!
