This week I took a 5-day vacation and came back to almost empty cupboards. It was time to get creative. Plus, the vaca made me tired so I was interested in EASY.
I always have pasta, salsa and frozen shredded cheese and ground beef.
This recipe has 4 necessary ingredients – those four. Voila!
The cool thing is it tastes great like this or you can really jazz it up.

Active Prep Time: 15 minutes Bake Time: 25 minutes
What you need:
1 lb ground beef
1 16-ounce jar salsa
1 8-ounce package Monterey Jack cheese -
8 ounces rotini (corkscrew) pasta
Other stuff you might want to ‘jazz it up’:
1/2 cup cilantro – chopped
4 green onions – chopped
1 tomato chopped
1) Preheat oven to 350.
2) Boil water for pasta.
**You will want to add about half to a little more from your 16 lb box of pasta. (Or cook it all up and take out half for another meal or a picky eater.)
3) Brown and drain ground beef. Stir in salsa.
4) In a medium size casserole dish, layer as follows: 1/2 pasta, 1/2 meat, 1/2 cheese – repeat.
