As the weather warms up, I find myself grilling anything and everything. I don’t know if it’s simply because there are less dishes in the kitchen to clean when grilling, or if it’s just experiencing the great outdoors. One thing I do appreciate about grilling is the fact that there is no unwanted, lingering smells left in the house from cooking. Since I love salmon, this grilled salmon recipe is perfect to make because it keeps the fishy smell out of my house and my taste buds satisfied. All the flavors from the spices mixed with the refreshing avocado topping makes it a keeper in my recipe book!

 

Grilled salmon with avocado topping

(Makes 4 servings)

 Ingredients:

  • 4 salmon filets
  • 1 Tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 avocado, chopped
  • ½ small red onion, chopped
  • Juice from 2 limes
  • 2 Tablespoons fresh cilantro, finely chopped

Directions:

Combine the salt, chili powder, cumin, paprika, onion powder, and black pepper together in a bowl.

Rub salmon fillets with olive oil and seasoning mix and refrigerate for at least 30 minutes.

Pre-heat grill. (I grill salmon at 325° F on our Treager grill.)                                                                      

Combine the avocado, onion, cilantro, and lime juice in a bowl and mix well. Chill until ready to serve.

Grill the salmon until it reaches an internal temperature of 145°F.
