Her Spin on a Family Meal Classic: Mini Meatloaf Muffins

My kids like meatloaf. Can you believe it. This is one recipe that I can stuff full of veggie goodness if I don’t feel like sparring with them to eat thier veggies at the table. Moving on!
My favorite go to recipe for this dish is Alton Brown’s of Good Eats Meatloaf Recipe and the twist? Use mini loave tins or muffin tins. Anything cute and small is always a hit.
And this is something I can make without killing any more kitchen appliances? I killed our Mixer this weekend? Need Proof?
So how about that meatloaf recipe eh?
Ingredients:
- 6 ounces garlic-flavored croutons
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon cayenne pepper
- 1 teaspoon chili powder
- 1 teaspoon dried thyme
- 1/2 onion, roughly chopped
- 2 carrots or 1/2 shredded zucchini
- 3 whole cloves garlic
- 1/2 red bell pepper
- 18 ounces ground chuck
- 18 ounces ground sirloin
- 1 1/2 teaspoon kosher salt
- 2 eggs
For the glaze:
- 1/2 cup catsup
- 1 teaspoon ground cumin
- Dash Worcestershire sauce
- Dash hot pepper sauce
- 1 tablespoon honey
Directions
Heat oven to 325 degrees F.
In a food processor bowl, combine croutons, black pepper, cayenne pepper, chili powder, and thyme. Pulse until the mixture is of a fine texture. Place this mixture into a large bowl.
Combine the onion, carrot, garlic, and red pepper in the food processor bowl. Pulse until the mixture is finely chopped, but not pureed. Combine the vegetable mixture, ground sirloin, and ground chuck with the bread crumb mixture. Season the meat mixture with the kosher salt. Add the egg and combine thoroughly, but avoid squeezing the meat.
Spray your muffin tins with non stick spray. And add mixture to the cups until they are 3/4 of the way full. Another option if you don’t want to mess up your pretty tins or deal with cleanup: Use cupcake cups or use disposable muffin tins.
Next, combine the catsup, cumin, Worcestershire sauce, hot pepper sauce and honey. Brush the glaze onto the meatloaf after it has been cooking for about 10 minutes.
Pop those baby’s into the oven for 40 minutes at 325 degrees. During the last 20 minutes, spoon glaze over meatloaf. Viola, dinner is ready!
