Mediterranean Grilled Pizza

I am a huge fan of grilling.  Everything.   Meat – without question.   Vegetables – grilled avocado, anyone?  Fruit and desserts – the perfect way to finish off the meal!  One of my favorite grilled meals is planked salmon with procuitto-wrapped asparagus and pineapple over grilled angel food cake.  That’s right – angel food cake.  To die for!

But, this pizza may be my ultimate summer grilling favorite.  It is the taste of gourmet wood-stove pizza in 10 minutes in the comfort of your own patio.  I love the light and summery flavors.  And the crust – amazing!!  Your friends will think you slaved away for hours!

 

Grilled Mediterranean Pizza

All you need:ingredients

1 (12 inch) pre-baked pizza crust (I used Golden Home Ultra Thin Whole Grain Pizza Crust from Hy-Vee)

1 cup cherry tomatoes, halved

1 T. Olive oil

1 c. fresh pesto

½ cup artichoke hearts

¼ cup olives

2 T. fresh basil, thinly sliced

¾ cup fresh mozzarella cheese pearls

 All you do:

1. Prepare your grill. Brush olive oil onto the grill where you will be placing your pizza.

2.  Spoon pesto onto the pizza crust. Add the remaining toppings, as desired. Leave the edge of the pizza uncovered so toppings do not drip into the flame.uncooked

 3. Cover the grill for 5 to 10 minutes, depending on the heat of your grill, until your crust is brown and crispy and your cheese is melted (it will not brown, like in an oven). Check about every 3 minutes.

Ok – a few more words about the ingredients.  If you haven’t tried fresh mozzarella – you are really missing out.  On pizza, in salads, on kabobs, as a snack, it is simply delicious and different.   And, can I say any more about these crust?  Whole grain with 5 grams of fiber, only 1 gram of sugar, and 95 mg of sodium.  Yummy and healthy!
