It’s finally summer. I’m sure the weather will warm up eventually, right? Picnics, outdoor barbeques, and family reunions will be in full swing soon enough. It’s time to ready all the yummy side dishes like potato salad, baked beans, and cole slaw that pair so well with burgers and brats.
Hubby is usually not a fan of any side dish containing mayonnaise, but my mom’s cole slaw rocks his socks. In true MIL of the year fashion, she’s found a way to make her version gluten free, and she’s sharing it with us.
Mom’s Gluten Free Cole Slaw
Finely chop 6-8 cups green cabbage*
In a separate bowl, thoroughly mix until smooth and creamy:
- 1 cup Hellman’s Real Mayonnaise (this states on the label that it is gluten-free)
- 1/2 cup sour cream
- 2 Tablespoons sugar
- 2 Tablespoons apple cider vinegar
- 1 Tablespoon milk
- 1/2 teaspoon salt (optional)
- 1/2 teaspoon pepper (optional)
Pour over chopped cabbage and mix thoroughly.
For color, garnish with about 8 cherry tomatoes, halved.
*This cabbage is good all by itself; but for variety and additional color, you may also add other veggies. Chopped red cabbage, celery, green bell peppers, or radishes would work well as would shredded carrots.
My mom comes from that generation of “a-dash-of-this-and-a-pinch-of-that” cooks, so she wants me to remind you that “any good cook would adjust these proportions to fit her or his own family’s taste!”
