So, as some of you may be aware, I love my crockpot. I own multiple and I use them regularly for everything from roasted almonds to peach cobble to the more traditional soups and entree’s. This Slow-Cooker Surprise Meatloaf is one of our go-to’s for a quick easy meal. I like it because it is easy and sneaks in a few extra veggies (Surprise #1) into our day. My family likes it because it has a layer of ooey, gooey cheese (Surprise #2) in it. I say Win-Win!
Slow-Cooker Surprise Meatloaf
Ingredients:
2 pounds 93% lean ground beef (or 1 pound ground turkey or ground pork with 1 pound ground beef)
2 eggs, beaten
1 cup Quick or Old-Fashioned oats
2 cups shredded carrots
1 cup chopped onion
1 tsp black pepper
1 T. garlic
½ tsp Lawry’s seasoning salt
1 ½ cup mozzarella or cheddar cheese, shredded
½ cup ketchup
1 tsp prepared mustard
¼ c. brown sugar
All you do:
1. Begin by chopping veggies. I like to use my food processor to make them extra fine – that way my family doesn’t grumble about carrots in their meatloaf :).
2. In a large bowl, combine ground beef, eggs and oats. Add remaining ingredients and mix well.
3. Pat ½ mixture into a 4-qt slow cooker. Layer cheese on top.
4. Pat the remaining meat mixture on top of the cheese layer.
5. In a small bowl, mix ketchup, mustard and brown sugar. Pour on top of meatloaf.
6. Cook on High for 3 ½ -4 hours (or until thermometer reaches 165⁰F) or on Low for 5-6 hours. Drain.
7. Slice and Enjoy!
