There is nothing better than a little adult beverage and salsa while waiting for the grill to do its magic or while relaxing with friends.
This is one of my favorite recipes for family & friend get-to-gethers this time of year. The red, white and blue colors of the salsa are a fabulous way to celebrate Memorial Day, Flag Day and, of course, Fourth of July! It is also really easy to make and economical this time of year. Enjoy with some delicious blue and white corn chips and a mojito for a cool, refreshing evening on the deck or at the lake!
Red, White & Blue Salsa
2 c. fresh blueberries
½ c. red onion, chopped
1 jalapeno, seeded and diced fine
1 red bell pepper, seeded and chopped
1 T. chopped cilantro
1 T. lime juice
All you do:
1. Combine all ingredients in a bowl. Stir to combine.
2. Serve at room temperature with whole grain tortilla chips, chicken, fish or pork.
Variation: substitute mango, peaches, or strawberries in place of blueberries.
