Awhile back, I was searching the archives of the internet world, looking for a new recipe for a football party when I ran across this little gem. Several adaptations and tweeks to the recipe later, we have perfection my friends! This is a go-to for tailgates and the holidays. And, the smell of the almonds roasting in your slow cooker is absolutely AMAAAZING.
Slow-Cooker Cinnamon Sugar Almonds
All you need:
1 cups granulated sugar
½ cup packed light brown sugar
1 ½ tsp ground cinnamon
2 egg whites
3 teaspoons vanilla
4 cups almonds (or other nuts, as desired)
All you do:
1. Spray a 4- to 5-quart slow cooker with cooking spray.
2. In a large bowl, stir together sugars and cinnamon. Set aside.
3. In a small bowl, beat egg whites and vanilla until a little frothy.
4. Place nuts in slow cooker.
5. Pour egg white mixture over nuts and stir until nuts are evenly coated.
6. Sprinkle cinnamon sugar over nuts, and stir until nuts are all coated well.
7. Cover; cook on low heat setting for 3 hours, stirring every 20 minutes. When cooking time is up, spread nuts on cookie sheets to cool until dry.
8. Store in an air-tight container until ready to serve.
