I know it’s not quite spring yet, but warmer temperatures have me craving spring and summer produce.
Fresh berries are my favorite fruit to eat in the spring and summer. I love adding them to my morning oats, to smoothies and to yogurt. But my sweet tooth also has me craving ice cream when the temperature rises.
So I created a faux ice cream using frozen strawberries to satisfy my craving for frozen treats.
This recipe is so easy and delicious (and has a fraction of the fat and calories found in ice cream!).
Strawberry Chocolate Chip “Ice Cream”
1 1/2 cups frozen strawberries
1 tsp. honey, or more to taste
1 tbsp. almond milk, or more if necessary
1 tbsp. dark chocolate chips
Place frozen strawberries, honey and almond milk in a food processor or blender. Combine, scraping down the sides, until the mixture resembles soft serve ice cream.
Transfer to a bowl. Top with chocolate chips.
Enjoy!
