Our Keepsake Journal is Here! 🎉

On of the best ways to master money is eating in. Part of eating in means KNOWING what’s in your freezer and pantry. Below are 21 of my favorite recipes that feed a family of 6 for under $2.00 per person per serving.

When you take stock of what is in your freezer and pantry while planning your menu, it is easier to scout deals and stock up on items like frozen vegetables, chicken prices, beef. All of these are great items to fill your freezer with.

Meal Planning is the greatest way to save money, next to coupons (which I don’t do). So if you wondering what that entails or looks like, you can print the menu and then add some of these recipes to your weekly meals. (Click here for print out: HVFH Weekly Menu

1. Colorado White Chili (adapted from Don’t Panic, Dinner’s In the Freezer).

1 T. cooking oil

1 medium onion, chopped fine or use 2 green onions, diced

4 large cloves of garlic, minced

1 4.5 oz can of diced green chilies (mild or hot)

1 T . cumin (powdered works best)

1/2 t. ground red pepper

2 t. of oregano

1/2 t. ground cloves

1 15.5 oz can great white northern beans (do not drain)

1. 15.5 oz sweet corn or frozen (here in Nebraska, we just shave it off the cobb)

1  15.5 oz can of black beans (this can be added or not added to it, we love our black beans)

2 cups of cooked chicken  chopped or two cans of canned chicken

5 cups of chicken broth

Serve with shredded Monterrey jack cheese, sour cream and tortilla chips. To make it more kid friendly, skip the chili and onion, substitute a mild can of Rotel!

Instructions

In a large pan combine oil, onion, garlic, and chilies. Saute until tender. Stir in the spices, beans, corn, chicken and chicken broth. Cook and stir until heated through. Adjust seasonings to your family’s tastebuds, then allow it to cool before storing the soup in a freezer bag or freezer container. This recipe serves 6 to 8 hungry people! If you would like to create another batch, simply double or triple the amount of each ingredient and dish out into your freezer containers!

    • 2 (14 ounce) cans diced tomatoes ( undrained)
    • 1 large onions ( chopped)
    • 4 garlic cloves ( pressed)
    • 2 tablespoons olive oil ( divided)
    • 2 large carrots ( chopped)
    • 2 small celery ribs ( chopped)

Directions

  1. In a large soup pot, heat the one tablespoon of the olive oil over medium high heat.
  2. Add the onion and cook till nearly translucent.
  3. Now add the garlic. Don’t let the garlic brown and saute another couple of minutes.
  4. Add the rest of the chopped veggies, sauteing for just a minute or two; the extra tablespoon of olive oil is if you need it for the rest of the veggies. Remember–you’re not cooking them– just sauteing them for the wonderful flavor this quick step will infuse in your soup.
  5. Add the thyme and salt and pepper while sauteing.
  6. Now put the veggies in the crock pot, add the tomatoes and broth.
  7. Cook on low 7-9 hours (depending on your crock pot) or high 4-6 hours.
  8. Just before serving, gently mash some of the potato chunks against the side of the crock pot to thicken the soup, give it a stir and serve.

Sweet & Crunchy Valentine’s Snack Mix

Valentine's Day snack mix by a white bowl

There is something about this time year that makes me hungry for a good snack mix. Maybe it’s the dull, grey weather. And, the fact that what I would really like to do is stay in my pajamas, on the couch with a good book or movie, and eat snack mix ALL day Long! With tea. Or better yet—wine. Wine goes with snack mix, doesn’t it?  I really just love all the different flavors, textures, colors, and the fact that I can almost make a healthy meal out of this stuff. Protein —you betcha. Whole grains—of course! Fruit—yes. M&Ms—they are...

The Mexican Brownie Disaster (Recipe Inside!)

The Mexican Brownie Disaster (Recipe Inside!) www.herviewfromhome.com

Even as a teenage I remember browsing through my mom’s cookbooks, marking recipes that piqued my interest, but rarely seeing any through to fruition. In part, this was due to my mother’s love-hate relationship with the kitchen. Love because she believed strongly in family dinnertime and was happy to open our home and table to guests. Hate because she didn’t actually enjoy cooking and certainly wasn’t looking for opportunities to mix, chop, roast, or blend more than absolutely necessary. Market Day Chicken Stir Fry was a go-to and family favorite. I, on the other hand, thought it might be exciting...

Organize Your Pantry in 10 Easy Steps www.herviewfromhome.com

Having an unorganized pantry was causing me stress. Every time I opened it, it bothered me. And, if your household is anything like mine, the door to the pantry gets opened A LOT, everyday! There was no better time than after the holidays and the start of a new year: I was going to get it organized, no matter what.  I assessed the project for quite some time, researching, and shopping, but I didn’t want it to look mismatched and like I had just thrown things together. I wanted it legit, organized like a pro. We don’t have a very...

I Used to Want to Change the World. Now I Just Want a Cookie. www.herviewfromhome.com

I’m on the seventh day of a month-long highly restrictive diet to try to deal with some health issues I’ve been having. I want to get that information out of the way up front, just in case this post comes across a little “hangry.” As I’ve been dealing with cutting things from my diet and adding in new things to try to figure out why I’m having my current health issues, it has occurred to me how much time I’ve had to spend thinking about food that I used to spend being productive. It’s not just the actual food prep...

Business owners are smart. Especially Etsy shop owners who see an opportunity—like capitalizing on the latest American obsession. So here it is. For “This is Us” fans (hahaha—like there are people out there who AREN’T “This is Us” fans), Etsy shops are now offering Crock-Pot decals of phrases like “Unplug Me, Jack” and also images of his beautiful face. This is how we can bring him back, girls. And also keep our Crock-Pots. Kidding!
