While I’m a food blogger and spend an unnatural amount of time taking pictures of food I’ve cooked, I don’t always cook. In fact – confession – sometimes, the thought of cooking makes me want to scream, cry, run away and then flop on the floor and throw a nice, long screaming fit.
Maybe I’m exaggerating. But still. Sometimes I just do NOT want to cook. On those nights, we either go out, or, when our budget is screaming for mercy, we may just snack on things – like popcorn or crackers and cheese.
I heart crackers and cheese.
Sometimes we get fancy and make dips. Like this one – Beef and Horseradish Dip.
The name pretty much says it all: there’s dried beef in it, and horseradish (a little if you are a little fancy, a lot if you’re really fancy, and not on a date), plus a bit of chopped onion and cream cheese to pull it all together on a cracker that you shove right in your mouth (unless you’re on a date, then small bites are best).
This dip is very similar to my Bagel Dip with Dried Beef, but yet, it’s oh so different – the horseradish really gives it that somethin’ somethin’.
It’s kicky!
Beef & Horseradish Dip
Ingredients
1 8 –oz block of cream cheese, softened
6-8 slices of dried beef, chopped into bite-sized bits
½ a small onion, chopped finely
1-2 T horseradish, or more to taste
Instructions
Mix all ingredients together in a medium-sized bowl until well combined. Store in the refrigerator.
