Graduation season is coming up and that means LOTS OF FOOD. In our family, celebrations go hand-in-hand with good food. And with seven kids in my immediate family, not to mention our extended family, we are throwing parties or getting together quite often. I’d like to share some of my favorite ideas for graduation (or any occasion!) buffets.
I like pulled pork or beef sandwiches as much as the next person, and that can be a great choice when you are feeding lots of people. But if you are looking for something different for your party, here are three ideas.
1. Taco Bar
One of the best graduation receptions I’ve been to had a taco bar, complete with cinnamon sugar chips and fruit salsa. A lot of the food could be prepared in advance (like the meats) or purchased ready-to-go (like shredded cheese and lettuce). I compiled two lists of ideas, one that is super easy and simple and one that is more elaborate. I also included links to recipes online for more inspiration!

- Ground beef, seasoned for tacos
- Shredded cheese
- Shredded lettuce
- Salsa
- Sour cream
Fancy
- Choices of tortillas: flour, corn, crunchy, flavored
- 2 kinds of meat: Ground beef, shredded chicken, shredded pork

- Guacamole
- Tortilla Chips
- Nacho cheese
Kellie, mom of the graduate, said it is one of the easiest parties she has ever done. Her advice is to shop at Sam’s Club for reasonable prices. She found everything from nacho cheese and tortilla chips to chopped lettuce and shredded cheese. Kellie also recommends preparing the meat in advance. You could even do it a couple of weeks before and stick it in the freezer!
