My husband isn’t home this week. He travels with his job. I have to admit I actually have learned to love cooking when he’s in town. (Stop laughing, those who knew me as a ‘working woman’.) Honestly, when I was working my way up the chain I never cooked. I ate out every meal, every day. But now, I have to worry about meeting budgets, making grocery lists and keeping things healthy – or at least halfway healthy for 4 mouths.
I like EASY and healthy and something my kids will eat.
My 3-year old actually yelled out, “I love those carrots” when I pulled these babies out tonight.
When my husband is gone I NEED easy.
This is easy and SO tasty. It is also pretty healthy.
Ingredients
- A bag of baby carrots
- 3 tablespoons good olive oil
- 1 1/4 teaspoons salt
- 1/2 teaspoons black pepper
- 2 tablespoons of your favorite spice. (I love garlic, sometimes Lawerys, sometimes dill)
Directions
Preheat the oven to 400 degrees F.
Dump the carrots on a baking sheet. Drizzle olive oil over the top and stir around until they’re covered in olive oil. Sprinkle spices on top.
Roast in the oven until soft (20-30 minutes).
Serve.
They’ll disappear fast. The only problem with these is that I’ll eat almost the entire package if left alone with them!
