SUPER Easy Roasted Carrots

My husband isn’t home this week.  He travels with his job.  I have to admit I actually have learned to love cooking when he’s in town.  (Stop laughing, those who knew me as a ‘working woman’.)  Honestly, when I was working my way up the chain I never cooked.  I ate out every meal, every day.  But now, I have to worry about meeting budgets, making grocery lists and keeping things healthy – or at least halfway healthy for 4 mouths.

I like EASY and healthy and something my kids will eat.

My 3-year old actually yelled out, “I love those carrots” when I pulled these babies out tonight.

When my husband is gone I NEED easy.

This is easy and SO tasty.  It is also pretty healthy.

 

Ingredients

  • A bag of baby carrots
  • 3 tablespoons good olive oil
  • 1 1/4 teaspoons salt
  • 1/2 teaspoons black pepper
  • 2 tablespoons of your favorite spice.  (I love garlic, sometimes Lawerys, sometimes dill)

Directions

Preheat the oven to 400 degrees F.

Dump the carrots on a baking sheet.  Drizzle olive oil over the top and stir around until they’re covered in olive oil.  Sprinkle spices on top.

Roast in the oven until soft (20-30 minutes).

Serve.

They’ll disappear fast.  The only problem with these is that I’ll eat almost the entire package if left alone with them!

  • Mmmm. Sounds delicious… and looks easy. Win, win. I’m totally going to try these!! Brown sugar & butter is also really tasty on carrots… but not that healthy! 😉

  • I love this!! Thank you Jen!! I struggle to find veggies that my kids will eat (ok, I admit, I dont’ like veggies much either). I need EASY, tasty choices. 🙂

  • Stephanie and Alissa – this is SUCH a great choice! And you can use any of your family’s favorite ‘spices’. Sometimes I just grab a mix I haven’t used for awhile. Yup. One of my favorites by far… and SO EASY! Dump a pkg of baby carrots and away you go!!

  • Thanks, Jen! I made these babies last night. Trying to cut the carb out of our normal meat, veggie and potato meal we have pretty much everynight if possible. Last night it was ribs, these carrots and green beans. They were DELICIOUS!!! Thanks!
