This is a great freezer meal that plops right into the crock pot for an easy weeknight. It is a healthy form of ‘Sweet and Sour Chicken’.
Make two or three one weekend and place them in your freezer for later!
It uses Truvia packets rather than sugar.
INGREDIENTS
Six 3 oz chicken breasts
1 red onion, chopped in large pieces
One 14 oz can no-salt added tomato sauce
1/3 cup low carb ketchup
1/3 cup dijon mustard
1 cup pineapple chunks (canned in juice, or fresh)
1/4 cup Truvia for baking (If you use packets, then 6 packets)
DIRECTIONS
1) Cut raw chicken into large chunks.
2) Place everything but the chicken in the crock pot and mix until blended.
3) Place in raw chicken and stir until combined.
4) Cook on HIGH for 3-4 hours or LOW for 5-6 hours.
