The last days of summer means peach season and some of the most deliciously sweet and juicy peaches that you will find come out of the orchards in Colorado. We always get two lugs direct from the orchard, one to cut up and freeze, and the other to eat fresh. We made a number of desserts with some of our peaches, but we also know that peaches can be a fantastic ingredient in savory dishes. The sweet warmth of a peach is a very nice combination with spicy things, so using some of our peaches with something spicy seemed like a good place to start.
With a bunch of grape and cherry tomatoes from our garden needing to be used, we decided to make a chunky peach salsa. Combining fresh peaches, jalapeno, onion and tomatoes with a splash of lime, this chunky salsa is sweet and spicy with a refreshing hint of citrus. Perfect on chips, a dip for crackers or as a side dish for a meal, the sweet and spicy combination gives a beautiful colorful splash to any plate.
Chunky Peach Salsa
Ingredients
- 1 large peach diced, peeled if you prefer
- 1 - 1 1/2 jalepenos seeded and diced
- 1/2 cup diced tomatoes
- 1/2 medium onion diced
- 1 - 2 Tbsp lime juice
Instructions
- Mix all ingredients in a bowl, stir to combine.
- Serve with tortilla chips, or on tacos or tostadas. Enjoy
