So, it seems a little — I don’t know — a little strange to ignore what happened last Friday in Connecticut. So, instead of pretending to be jolly and festive when I’m really not feeling it so much, I’d rather just get right to the point. I’d rather just give you something sweet in the midst of heartache and melancholy. I’d rather just wish you a very Merry Christmas and let you know how much I appreciate you coming here to read this and all the other offerings on Her View From Home.

Chocolate Caramel-Filled Cookies
Ingredients
2 3/4 c all purpose flour
1/2 c cocoa
1 tsp soda
1 c sugar
1 c brown sugar
1 c soft margarine
2 tsp vanilla
2 eggs
9 oz. pkg Rolos
Instructions:
Remove the wrappers from the Rolos. Beat margarine, sugar, vanilla and eggs together until smooth. Add the dry ingredients and mix until well incorporated. Shape a tablespoon of dough around each Rolo and roll in sugar. Bake 7-10 minutes at 375 degrees F. Cool 2 minutes before removing from the cookie sheet.
